My name is Sandy Thompson and I own a wine shop in Portland called Mt. Tabor Fine Wines. You had asked for comments on your wine making. I can tell you from 35 years of being a wine fanatic and collector that, if I were you, I would give up the search for a yeast culture and try your best to do indigenous yeasts from the vineyard and cellar. I have no doubt that wines made this way express terroir in a way that cultured doesn’t. Cultured is much safer but I think the results make it worth the risk. Of course you could have a culture waiting in case the ferment didn’t get going.
Also, I must say after picking up your white nectarines at Hawthorne New Seasons (my shop is 3 blocks up on Hawthorne) I was blown away. I can’t remember anything as good since my childhood days visiting family in South Carolina. I would love to be able to get some of your stuff consistently. My Father was a fruit shipper in Miami and I’ve loved, loved fruit since childhood. I’m not asking for wholesale I just would like to secure some as I love every type of fruit that you grow. I could pay cash or trade you in wine ( I have access to any kind). I could pick up somewhere in town or you could come by the shop and drop and shop. My wife and I would love to see your farm as well.
